Southwest Steak & Black Bean Salad
Ingredients and Cooking Directions
2 15-oz. cans black beans, thoroughly
rinsed
1 pint grape or cherry tomatoes, halved
(around 24)
2 avocados, diced
2 limes, juice of
1 TB. SOUTHWEST SEASONING
1⁄3 Cup canola oil
1⁄4 Cup chopped fresh cilantro
1 lb. steak (we used sirloin)
1 tsp. SOUTHWEST SEASONING * purchased from Penzeys
1 lime, juice of

In a large bowl, combine the beans, tomatoes,
avocados, lime juice, SOUTHWEST SEASONING,
canola oil and cilantro. Stir well to combine. Set
aside to let the flavors mingle while you prepare
the steak.
Wash the steak and pat dry. Rub on both sides with
the SOUTHWEST SEASONING. Grill or broil to your
desired level of doneness. 1” thick sirloin medium
rare is about 5-6 minutes per side over medium
high heat. Divide the black bean salad among
6 plates. Thinly slice the steak and arrange on the
plates. Sprinkle the steak with lime juice and serve.| Steak seasoned with Penzeys Southwest Seasoning |

Delicious Avocado - gotta love it!
Tip - roll the lime back and forth a few times before cutting it. It helps the juices flow =)

Allie-how do you know which avocado is ready? I always get them too squishy somehow. That picture looks perfect. Were the outsides green or black? Is there some trick to picking out the best ones?

The perfect avocado is mostly black but still slightly green, soft to touch but not mushy feeling. I like to buy mine the day before or the day I will use them just to make sure they will still be fresh. I also keep them in the fridge! Hope this helps =)
